Vegan Apple Cupcakes

The wholesomeness of the apples make it crazy to pollute it with lard – so keep it vegan. These work really well with the cream chargers to create an apple and cinnamon foam – recipes to follow.

These cupcakes are super simple if you have the ingredients ready. Takes 30 minutes to make from start to finish, and the glaze is a dreamy and easy one.


For the cupcake:

1 cup flour

3/4th cup sugar

1 teaspoon baking powder

1/4th cup vegetable oil

½ cup applesauce

1 teaspoon vanilla

1 apple, grated

3 tablespoon soy milk

A pinch of salt

For the filling:

5 tablespoon strawberry jam

For the Glaze:

1 cup Confectioner’s sugar

1 tablespoon salt

1 teaspoon lemon juice

Preheat oven to 200 degree centigrade. Arrange cupcake liners in mini-muffin trays. Combine flour, salt, baking powder, together.

Combine vegetable oil, applesauce, sugar, apple, vanilla, and soy milk together. Add this to the dry ingredients and mix till most of the lumps are gone. Using a small scoop put in a bit of the apple mixture onto the individual cupcake liners inside the muffin tin. Bake for 10-15 minutes, depending on your oven.

Remove when the center of the cupcakes is no longer moist. Remove and let the mixture cool down.

On the other hand, take the sugar with the salt and lemon juice for the grave. Either dip the top of each cupcake into the glaze, or create a pattern with the glaze on top of each cupcake. This recipe serves 6 people easily (1 person per cupcake) and it’s a great thing for those who are exercising and/or dieting and need recipes they can make. These certainly need some vegan whipped cream (made with cream chargers) to help them slide down your throat!!
