Vegan Fruit Tart
Tarts are one of the things which attract us a lot. In fact, making a tart from scratch might sound crazy, but the truth is, good fruit tarts are hard to get. These tarts are tasty, extremely quick in the making, and can be done within an hour if you want.
For the filling:
1 cup cherries
1 cup raspberries
½ cup sugar
1 teaspoon vanilla extract
For the Crust:
1 cup all-purpose flour
½ cup whole-wheat flour
4 tablespoon vegan margarine, cut into cubes and chilled
1 pinch salt
Combine the all-purpose flour, whole-wheat flour and salt together. Add the margarine and start combining with a pair of spatulas till the mixture resembles crumbs. Using a bit of iced water, form into very stiff dough. Once the dough is formed, wrap it in cling film and chill for 15 minutes.
Meanwhile, combine 3/4th cup of the cherries and 3/4th cup of the raspberries with the sugar and put them in a heavy-bottomed pan. Add 3 tablespoon water, and over low heat, simmer for 15 minutes, covered. Remove cover and mash roughly. Let cool. Chop the remaining fruits.
Roll out the crust thinly and fit on a 7” pie tin. Bake blind at 180 degree centigrade for 10 minutes. Remove and fill up with the prepared filling and the fruits, and bake for 10 more minutes. Remove, cool, cut into pieces and serve.
